Get ready for your new fall obsession. I have been making these Gooey Pumpkin Butter Bars since I could hold a spoon but now they’re even better. The kind folks at Country Crock invited me to try their new Buttery Sticks on my favorite fall recipes. And since they are ready to go right out of the fridge, no softening needed, they make my favorite recipes a whole lot easier.
Country Crock Buttery Sticks are made with sunflower oil, which mix right out of the refrigerator and into your favorite recipes. No need to microwave, or let your butter sit out when you want to whip up something for the kids. You can get out your ingredients, and start baking. There’s also a coupon you can download here on the ibotta app to save some money. And since we’re all short on money and time these days, I’ll cut to the chase and give you the recipe. I hate it when I’m reading a food blog and trying to make something and there’s a lot of fuss/backstory. Just gimme the recipe!
Gooey Pumpkin Butter Bars (makes 15 or so)

1 15-ounce can Pumpkin puree, unsweetened

4 Egg, large

1 box Cake mix, yellow

1 tsp Cinnamon, ground

1 tsp Nutmeg, ground

1 16-ounce box Powdered sugar

1 tsp Vanilla extract

1 cup Butter
-
1 8-ounce package Cream cheese
DIRECTIONS:
- Preheat oven to 350 degrees F. Spray a 9×13-inch baking pan with nonstick spray. I coat the bottom of the pan with a Buttery Stick because I’m country like that.
- Prepare the crust: In a large bowl, use an electric mixer to combine the cake mix, egg and butter. Pat the mixture into the bottom of your prepared pan.
- Prepare the filling: In a large bowl, use an electric mixer to combine the cream cheese and pumpkin until smooth. Add the eggs, vanilla and butter- beat well. Mix in the powdered sugar, cinnamon and nutmeg until well-combined. Spread the filling over the cake batter and bake 40 to 50 minutes.
Tip: Make sure you don’t over bake the bars! My oven gets really hot and things burn quickly (at least that’s what I tell myself). So err on the side of slightly underdone because you want them to be more gooey!
