You know when you bite into a cookie and it literally melts in your mouth? That’s what my Peppermint Dream Cookies do. They also happen to be the perfect treat to whip up with your little ones and leave out for Santa on Christmas Eve.

I made these in partnership with Country Crock and they are so buttery and flakey. I used Country Crock’s new Butter Sticks because they’re ready to go in your recipe right out of the fridge. No softening needed! So if you’re short on time like I am, or just don’t want to mess with an extra step in the kitchen, give them a try. I have a link for a coupon here. Try my Peppermint Dream Cookies then let me know what you think! I’m not a professional chef, just a mom trying new things so take all my recipes with a grain of salt.

Peppermint Dream Cookies

1 1/4 cups all-purpose flour*
1/2 cup cornstarch
1/4 tsp salt
1 cup Country Crock Buttery Sticks
1/2 cup powdered sugar
1/2 tsp peppermint extract

2 Tbsp Country Crock Buttery Sticks
4 Tbsp half and half
1/4 tsp peppermint extract
1 1/2 cups powdered sugar
1/4 cup finely crushed peppermint bits or candy canes

In a mixing bowl whisk together flour, cornstarch and salt, set aside.

Cream together butter and powdered sugar until combined. Mix in peppermint extract then with mixer set on low speed slowly add in flour mixture and mix just until combined. Cover bowl with plastic wrap and chill until nearly firm, about 1 hour. Preheat oven to 350 degrees. Scoop dough out 1 even tablespoon at a time, shape into a ball then transfer to an ungreased 18 by 13-inch baking sheet, spacing cookies 2-inches apart (keep dough that’s wont be baking chilled). Bake in preheated oven until cookies are set and bottoms are lightly golden brown, about 10 – 13 minutes.

Cream together butter, half and half, peppermint extract and powdered sugar until light and fluffy (if frosting is too thick add a little more half and half, if it’s too thin add a little more powdered sugar). Let chill for 10-15 minutes to firm up if necessary. Working with one cookie at a time spread frosting over cookie and immediately after frosting each cookie add crushed peppermint bits before frosting starts to set, repeat process with all cookies. Store cookies an in airtight container at room temperature.

Don’t forget to make a note for Santa letting him know you made these especially for him!
